Cheesy Chicken with Asparagus

My cousin gave me a recipe called chicken princess that I was excited to try out.  When I Googled chicken princess, however, I found recipe after recipe of Chinese foods.  The recipe I got from Kristi was a bit different, but a nice change of pace from our typical dinner.  I wonder if it doesn’t have another name that I don’t know.  If I didn’t know better, I’d call it “cheesy chicken with asparagus.”

Cheesy Chicken with Asparagus

makes 4 servings


  • boneless, skinless chicken breasts
  • small bunch of asparagus
  • monterey cheese
  • flour
  • salt and pepper
  • butter


  1. Lightly salt and pepper the chicken breasts.  Flour the breasts and sautee in butter (about 3 minutes per side).
  2. Cut asparagus into pieces.  Place several pieces on each chicken breast and top with a slice of cheese.  Scatter remaining asparagus in baking dish.
  3. Bake at 350 for 30 minutes or until cooked through.
